This is a phrase you will hear in sushi restaurants in the Ginza area of Tokyo.
It's not just delicious, it's extraordinary because it can even change your outlook on life. The tuna is located in the Tokyo Metropolitan Central Wholesale Market (Toyosu Market). Currently, there are about 200 tuna stores (middle wholesalers) in Toyosu Market, but this store only sells carefully selected raw bluefin tuna (bluefin tuna) caught in the waters off Japan.
The shop name is "Ishiji."
Tuna vary greatly from individual to individual, and their quality varies subtly depending on the season, ocean conditions, weather and water temperature at the time of landing, fish food, fishing method, personality of the fisherman, processing after catching, and storage conditions before shipping. In particular, from late autumn to winter, when bluefin tuna is in season, low pressure systems develop in Japan and the sea becomes rough, so the arrival of the fish itself is reduced, and perfect fish are not always available.
Even in such circumstances, Ishiji is a skilled matchmaker who is able to identify the peak of flavor in fish, and sometimes even goes so far as to age the tuna to bring out its full flavor.
